This rich and buttery dough is always a breakfast favourite! In this class, you will learn how to make the basic dough while exploring its versatility and endless possibilities. We will also cover fillings, and students will get to make the Bake Shop’s famous brioche pépin.

Cook a French meal with Chef Kelsey | $130
Join Chef Kelsey Johnson from Café Linnea for an evening of cooking and fun! Kelsey will guide you through preparing a delicious three-course French meal starring her famous roast chicken. There will be plenty of tips and tricks along the way. This class will end with a shared meal and dessert, so come hungry!

Our signature Duchess cake, with its beautiful green marzipan dome, is a delight to make. In this class you will be guided through all the steps to making this cake, including the pastry cream filling, shaping the dome, and making the little marzipan rose to go on top. Halloween Cookie Decorating | $90
This class is all about learning to decorate sugar cookies for our favourite spooky holiday. Your instructor will demonstrate how to make sugar cookie dough and give an overview of basic decorating techniques. You will then jump in and decorate your own cookies.
Jam and Marmalade Workshop with Camilla Wynne | $90
Join Master Preserver Camilla Wynne of the Preservation Society and author of ‘Jam Bake: Inspired Recipes for Creating and Baking with Preserves’ for a preserving workshop focused on holiday gifts! In this workshop we will discuss the science of safe canning and how to make the best seasonal preserves (using less sugar and little or no pectin). Camilla will expertly demonstrate how to prepare one seasonal jam recipe and one marmalade recipe. You will leave the class with a jar of each preserve (aka stocking stuffers), plus a bonus candied peel recipe, ready to tackle any jam-making project and able to safely and creatively concoct your very own recipes.
Lemon Meringue Cake | $140
In this class you will learn how to make a Duchess staff favourite. From the chiffon to the lemon cream, each step will be covered, including toasting the meringue. Each student will leave with a full-sized cake to share with family and friends.
Macaron Basics | $135
Our biggest seller at Duchess Bake Shop, French macarons can be quite tricky to make at home—and in this class we let you in on our best tips and tricks for turning out great macarons. You will learn to make a basic shell and some of our most popular fillings as well as learning about the origins of this dainty treat. Each student will take home about a dozen macarons.
More Pies! | $140
Do you want more practice on working with pie dough or more ideas on how to use it? This class is a follow-up to our Pie Basics class. With pie dough being as versatile as it is, we wanted to give you a chance to explore some of the things that you can make with pie dough other than traditional pies. In this class we will cover pie cookies and handheld pies, galettes, and quiche. *Although having taken Pie Basics is not a requirement to attend this class, be aware that we will not be spending a lot of time on basic pie dough.
Pâte à Choux | $135
Knowing how to make pâte à choux, the dough used to make éclairs and cream puffs, is a great fundamental skill to have in your back pocket. In this class, you’ll gain confidence in making and piping pâte à choux. You’ll also learn how to make classic pastry cream and get to fill and decorate the choux you made.
Pie Basics | $140
Conquer your fear of making pie dough and become a pie wizard! In this class we teach you how easy it is to achieve the perfect pie dough and reveal our tips and tricks for baking delicious pies everyone will come running back for. You will take home a full pie as well as the pie dough you make.
Puff Pastry | $140
Although making puff pastry at home can be a time-consuming project, once you know the basics, it’s not that difficult and can be extremely rewarding. In this class you will learn the basics of dough lamination, temperature control, and how to roll and bake puff pastry. Each student will also get the chance to assemble their own mille-feuille.
Savoury Baking Favourites | $140
Come and join us for a twist on our usual sweet baking classes and learn how you can use basic pastry doughs and bases to expand your baking into the savoury realm! This will include making the Bake Shop’s famous Tartiflette as well as handheld savoury pastries.
