This class is one of Duchess Atelier's most popular classes. We will teach you the Duchess Bake Shop way of making our classic Raspberry White Chocolate Scones. As well as everyone's favourite, Key Lime Tart. Nobody can resist sneaking a taste of a warm Florentine at the end of this class. Learn to make this perfect salty & sweet combo sure to keep you going back for more.
The verdict is in... you LOVE this class, and we do too. One of our most requested recipes in Atelier is for the caramel in the filled shortbreads that greet you at your station when you arrive for a class. We are so happy to include the seasonal flavours of this delicious caramel for you in this class. Want to learn how to get the soft, gooey centre to your meringues and learn what other flavours you can make? How much chocolate really does go into the brownie? We have had the honour of teaching some of Duchess Bake Shop's favourite pastries for almost 10 years, the list of favourites keeps growing so we had to create a new class just for you! Join us while we continue to show you welcome you into our kitchen and share some of our favourite recipes with you.
Enriched breads are yeast products that contain the addition of fat (butter or oil) and eggs. In this highly requested class we are going to cover everyone's favourite addition to brunch, Cinnamon buns! Another very popular type of enriched bread is babka. This soft textured bread is twisted together with chocolate fudge and makes the most beautiful treat.
Flour, water, yeast and salt are all you need to make delicious bread. We are going to take that one step further and include a pre-ferment to bake delicious, fresh foccacia bread. We will also use a simple milk bun dough to make classic dinner buns or garlic pull-apart bread, you pick!. The class will finish off with a tasting of our freshly baked focaccia and home made whipped ricotta. You will go home feeling more confident in baking bread in your own kitchen.
Sourdough has been one of our most requested classes over the years in the Atelier kitchen. Traditional sourdough bread is a multi-day process that requires long proofing times. We will walk you through a hybrid loaf of bread that uses natural sourdough starter as well as commercially produced yeast so that we are able to shape and bake a loaf in class. We will talk about sourdough starter and each student will get to take home their own portion of starter to bake with at home. We will also cover a couple other recipes that include sourdough starter which are great quick recipes that help use up the starter rather than throwing it out.
*Please note these class times vary from many of our other classes and are 30 minutes longer. It is the student's responsibility to arrive at the correct time. *
Ever wanted to learn to make fresh, warm doughnuts at home? But are nervous about everything involved? Let us walk you through, step-by-step everything from mixing, to proofing, to frying so you can feel comfortable making these classic pastries at home.
The decadent chocolate Duke Cake is one of our best-selling items at Duchess Bake Shop. This cake may look intimidating, but in this class we will take you though each recipe step-by-step while you bake & decorate your own perfect Duke Cake. This class is for the chocolate lover, we will finish the class off with a chocolate tasting of some of our favourite Valrohna chocolates and talk about how chocolate is made.
Macaron have been on the Duchess Bakeshop menu since the day we opened the doors. These tricky little cookies constantly have us on our toes. In this class we will teach you how to make both French and Italian meringue shells. You will get to make two batches back to back and decide which method you like best. We will finish off by filling all your macaron with 2-3 different flavours.
You know spring is in the air once this Macaron Gâteau flavour starts to hit the pastry case in the Bake Shop. "Printemps", meaning spring time is the perfect flavour for this months feature Macaron Gâteau class. Filled with cream cheese whipped ganache, creamy pistachio buttercream and fresh strawberries tossed in honey and clove this cake is sure to help us welcome the freshness of spring. Macaron baking experience is an asset but not required.
Maple syrup brings a warm, earthy sweetness to desserts, perfect for cozy moments or as a standout flavour.March brings us right into the heart of maple syrup season in Canada and we love to bake with it. In this seasonal class we will learn to make a Duchess Bake Shop classic, Maple sugar pie. We will learn how to roll out and work with our perfect, flakey pie dough and make a creamy maple custard filling. In addition to a pie we will learn to make Maple pouding chômeur, a classic Canadian dessert made with warm vanilla cake baked in a homemade maple caramel, and served with creamy vanilla bean whipped cream.
When you think of "savoury baking" we hope you think about cheese! Join us as we dive into the tasty world of savoury baking, starting with Duchess Bake Shop's ever popular Cheddar & Green Onion Scones—perfectly flaky and full of flavour. You'll also learn to make our classic spin on a French Tartiflette, a hearty and comforting flatbread that’s sure to impress. To round out the experience, we'll bake a fragrant herb & cheese pan bread, an ideal companion for warming soups as the colder months approach. This class smells heavenly!
We are so excited to finally announce that we have created a week-long camp just for kids! This March break we will be welcoming kids in grades 6-9 for 5 days of baking!
In this week long camp your kids will have the opportunity to learn how to be a Duchess Bake Shop baker and get an inside peek into everything Duchess, including a tour of our production kitchen.
We will make everything from pies, cookies and scones to macaron, bread and cakes. Students will have something to take home to share with their families every day as well as bake a snack to enjoy in class.
Unlike the kids classes we have already been loving this past year, this camp will be just for the kids. Please ensure that your child is comfortable being left under our care for 3 hours each day. Each station will work in a group of two, feel free to register with a friend and be paired together.
