This class is one of Duchess Atelier's most popular classes. We will teach you the Duchess Bake Shop way of making our classic Raspberry White Chocolate Scones. As well as everyone's favourite, Key Lime Tart. Nobody can resist sneaking a taste of a warm Florentine at the end of this class. Learn to make this perfect salty & sweet combo sure to keep you going back for more.
The verdict is in... you LOVE this class, and we do too. One of our most requested recipes in Atelier is for the caramel in the filled shortbreads that greet you at your station when you arrive for a class. We are so happy to include the seasonal flavours of this delicious caramel for you in this class. Want to learn how to get the soft, gooey centre to your meringues and learn what other flavours you can make? How much chocolate really does go into the brownie? We have had the honour of teaching some of Duchess Bake Shop's favourite pastries for almost 10 years, the list of favourites keeps growing so we had to create a new class just for you! Join us while we continue to show you welcome you into our kitchen and share some of our favourite recipes with you.
Enriched breads are yeast products that contain the addition of fat (butter or oil) and eggs. In this highly requested class we are going to cover everyone's favourite addition to brunch, Cinnamon buns! Another very popular type of enriched bread is babka. This soft textured bread is twisted together with chocolate fudge and makes the most beautiful treat.
The Duchess cake, also known as the "Swedish Princess Cake" is a pastry classic. Made with light lemon chiffon cake, vanilla bean pastry cream, home made raspberry jam, vanilla bean whipped cream and finished off in the classic dome shape, covered in marzipan. This cake is so fun to make and ever more enjoyable to eat. Each student will assemble & carve their very own Duchess cake to take home and share with friends & family. This class is only around for a very short time each year, take advantage while you can!
Flour, water, yeast and salt are all you need to make delicious bread. We are going to take that one step further and include a pre-ferment to bake delicious, fresh foccacia bread. We will also use a simple milk bun dough to make garlic pull-apart bread. The class will finish off by making home made ricotta to take home and enjoy with your fresh focaccia. You will go home feeling more confident in baking bread in your own kitchen.
This cake is our favourite cake for spring! It's light, fruity and fresh. When asked what our favourite class is the Lemon Meringue Cake is always at the top of the list. Learn to make the lemon chiffon cake, lemon cream and how to use the blow torch to give it that toasted meringue finish! We will even let you in on a little Bake Shop secret, this cake has a layer of salted caramel we bet you didn't know existed! We think it's what completes this cake in the best way. Blow your family and friends away with this cake!
Macaron have been on the Duchess Bakeshop menu since the day we opened the doors. These tricky little cookies constantly have us on our toes. In this class we will teach you how to make both French and Italian meringue shells. You will get to make two batches back to back and decide which method you like best. We will finish off by filling all your macaron with 2-3 different flavours.
Discover the endless possibilities of flavours for one of France's most traditional pastries - Éclairs. In this class we will learn to make pâte a choux dough and pipe into perfect éclairs. We will work with vergeoise, also know as craquelin to give the éclairs their crunchy top. Learn to create 3 different flavours of éclairs taking inspiration from some of Duchess Bake Shops favourite éclairs over the years.
A twist on our classic macaron class, macaron flowers! Learn how to pipe your macaron into a cute flower shape, perfect for spring! In this class we will make 2 batches of macaron and using different colours we will create a beautiful bunch of sweet flowers to share with your family and friends (or yourself). We will also introduce you to the classic buttercream recipe used in the Duchess Bake Shop kitchen to fill our flowers. Using our new extracts from Duchess Provisions well will create the flavours of spring.
Baking the perfect pie is something every baker strives for. In this class we will take the fear away from working with pie dough and each make a beautiful Sour Cream Cherry Pie - one of the bake shop's more popular items. We will also try our hand at galettes, a quick hand pie that can be easily whipped up with whatever fruit you have in season. Lastly, it's not a pie class without talking about the dough its self. Each student will go home with some pie dough to continue baking pies at home.
Celebrate the arrival of spring with a cake decorating class at Duchess Atelier. Get creative with our twist on Duchess Bake Shop's beloved Provence tea, as we transform it into a delightful white chocolate cake. Savor the combination of fresh blueberry compote and bergamot extract. Master the art of baking, crafting white chocolate frosting, and assembling and decorating your very own cake. This scrumptious creation is the perfect accompaniment for any laid-back barbecue with loved ones.
Sourdough has been one of our most requested classes over the years in the Atelier kitchen. Traditional sourdough bread is a multi-day process that requires long proofing times. We will walk you through a hybrid loaf of bread that uses natural sourdough starter as well as commercially produced yeast so that we are able to shape and bake a loaf in class. We will talk about sourdough starter and each student will get to take home their own portion of starter to bake with at home. We will also cover a couple other recipes that include sourdough starter which are great quick recipes that help use up the starter rather than throwing it out.
Please note these class times vary from many of our other classes and are 30 minutes longer. It is the student's responsibility to arrive at the correct time.
All tickets are sold per person.
Children ages 8 and up are welcome to attend classes with an adult. Both adult and child must have their own ticket.
Children 16 and up can attend on their own without an adult. Please be mindful that if your child comes alone, they will be paired with someone else in the class.
Please note the class time when purchasing your ticket. Not all class times are the same. It is the student's responsibility to note the date and time of the class they are registered for. Refunds will not be issued for classes that are missed.
All Students will be paired in groups of two.
