FALL 2024 CLASS SCHEDULE 

TICKETS WILL BE AVAILABLE TUESDAY SEPTEMBER 6th AT NOON

TICKETS ARE SOLD PER PERSON UNLESS OTHERWISE STATED

PLEASE NOTE THAT SOME CLASS TIMES HAVE RECENTLY CHANGED. IT IS THE STUDENTS RESPONSIBILITY TO NOTE THE DATE AND TIME OF THE CLASS THEY ARE REGISTERED FOR. REFUNDS WILL NOT BE ISSUED FOR CLASSES THAT ARE MISSED. 

All Students will be paired in groups of two.

  • If you purchase a single ticket you will be paired with another student.
  • If you purchase two tickets you will be paired together.
  • If you purchase three tickets, two people will be paired together and one person will be paired with another student.

 

    "CAFÉ MOCHA" MACARON GÂTEAU | $175

    This one is for the coffee lovers! Advance your macaron making skills with a Duchess Bakeshop classic, the macaron gâteau. This flavour is sure to keep you warm while the weather gets cooler. We will fill our gâteau with creamy coffee pastry cream, milk chocolate whipped ganache, gluten free chocolate cake and silky French buttercream. 

    *Previous experience making macarons is an asset but not required. To familiarize yourself with macaron we suggest enrolling in our Macaron basics class*

    BAKE SHOP FAVOURITES | $175

     

    This class is one of Duchess Atelier's most popular classes. We will teach you the Duchess Bake Shop way of making our classic Raspberry White Chocolate Scones. As well as everyone's favourite, Key Lime Tart. Nobody can resist sneaking a taste of a warm Florentine at the end of this class. Learn to make this perfect salty & sweet combo sure to keep you going back for more.

      BREAD - CINNAMON BUNS & BABKA | $175

      Enriched breads are yeast products that contain the addition of fat (butter or oil) and eggs. In this highly requested class we are going to cover everyone's favourite addition to brunch, Cinnamon buns! Another very popular type of enriched bread is babka. This soft textured bread is twisted together with chocolate fudge and makes the most beautiful treat.

      BUTTERCREAM CAKES & PIPING TECHNIQUES - DUCHESS BAKE SHOP'S 15th BIRTHDAY! | $175

       

      Celebrate Duchess Bake Shop's 15th birthday with us by learning tips and tricks on working with buttercream and making a perfect birthday cake. 

      • Learn how to properly level, stack, and crumb coat your cake for a flawless finish.
      • Master the basics of working with buttercream, including smooth finishes, piping borders, and creating decorative textures.
      • Learn how to perfectly bake a butter based cake.

          GINGERBREAD HALLOWEEN HAUNTED HOUSE DECORATING | $125

           

          Get into the spooky spirit by learning to build and decorate your very own Gingerbread Halloween Haunted House Perfect for both kids (10+ up) and adults, this hands-on workshop is all about creativity and fun as you transform gingerbread into a frightfully festive haunted house.

          • Assemble your gingerbread house, learning tips for a sturdy construction using isomalt.
          • Decorate with spooky icing techniques, adding cobwebs, ghosts, and ghoulish details.
          • Use a variety of candies and edible decorations to bring your haunted house to life.
          • Explore fun design ideas and create a one-of-a-kind Halloween centerpiece.

          HALLOWEEN COOKIE DECORATING | $95

          Unleash your inner artist in our Spooky Halloween Cookie Decorating class! Perfect for both adults & kids (6+ up) this hands-on workshop will teach you how to turn ordinary cookies into festive, Halloween-themed treats that are as fun to make as they are to eat. Please note that each adult and child must have their own ticket to participate. 

          In this class, you will:

          • Learn the basics of royal icing, from mixing colors to achieving the perfect consistency.
          • Decorate a variety of Halloween-shaped cookies, including pumpkins, ghosts, and bats.
          • Explore fun techniques like flooding, piping, and adding spooky details with edible decorations.
          • Take home a box of your own creatively decorated cookies, ready to impress at any Halloween gathering.

          HARVEST BAKING | $175

          Elevate your Thanksgiving dessert table with our hands-on Harvest Baking class. Perfect for all skill levels, this class will teach you how to create three festive treats using ingredients from your garden: the classic Duchess Bake Shop Pumpkin Pie, rich Apple Cheesecake Squares, and elegant Carrot Cake Financiers.

          Our instructors will guide you through each step, from crafting perfect crusts and fillings to mastering presentation techniques. Leave with delicious desserts ready for to share with your family and friends.

          KIDS BAKING - DOUGHNUTS (8+ UP) | $210

           

          While the kids are off from school bring them to Atelier to learn some baking fundamentals and get them more comfortable in the kitchen. 

          Ever wanted to learn to make fresh, warm doughnuts at home? But are nervous about everything involved? Let us walk you through, step-by-step everything from mixing, to proofing, to frying so you can feel comfortable making these classic pastries at home. 

          *IMPORTANT* This class uses hot oil. We will not be allowing the kids to place their doughnuts in the oil, this will be done by the adult they come with. It is up to the parents to determine if this class is a good suit for their child. The kids will still be able to roll and cut out their doughnuts, decorate, fill and of course eat their fresh doughnuts.  

          *Each $210 ticket can accommodate the following scenarios:

          • 1 Adult and 1 child ranging in age of 8 yrs old to 17 yrs old
          • 1 Adult and 2 children ranging in age of 8 yrs old to 17 yrs old
          • If you are 14 yrs old to 17 yrs old with a companion that is also 14 yrs to 17 yrs, they may attend without adult supervision with one $210 ticket.
          • Please use this time to spend undivided attention to your child within the correct age range. If children, including babies who are under 8 yrs old arrive for the class, you will be asked to leave and will not receive a refund. This is for the comfort and safety of your kids as well as others attending. 

          Prior to class, we will reach out to confirm the numbers and ages of those attending.

          KIDS BAKING - THANKSGIVING (6+ UP) | $210

          In this class we will be making some Thanksgiving favourites just in time to impress all your friends & family. We will be making the classic Duchess Bake Shop Pumpkin pie, Triple chocolate chip cookies, as well as mixing and shaping a tray of dinner buns. 

          *Each $210 ticket can accommodate the following scenarios:

          • 1 Adult and 1 child ranging in age of 6 yrs old to 17 yrs old
          • 1 Adult and 2 children ranging in age of 6 yrs old to 17 yrs old
          • If you are 14 yrs old to 17 yrs old with a companion that is also 14 yrs to 17 yrs, they may attend without adult supervision with one $210 ticket.
          • Please use this time to spend undivided attention to your child within the correct age range. If children, including babies who are under 6 yrs old arrive for the class, you will be asked to leave and will not receive a refund. This is for the comfort and safety of your kids as well as others attending.

          KIDS BAKING - BEGINNERS (6+ UP) | $210

          While the kids are off from school bring them to Atelier to learn some baking fundamentals and get them more comfortable in the kitchen. Learn how to use a kitchen scale, stand mixer and a stove top while making some of our favourite Duchess Bakeshop recipes.

          *Each $210 ticket can accommodate the following scenarios:

          • 1 Adult and 1 child ranging in age of 6 yrs old to 17 yrs old
          • 1 Adult and 2 children ranging in age of 6 yrs old to 17 yrs old
          • If you are 14 yrs old to 17 yrs old with a companion that is also 14 yrs to 17 yrs, they may attend without adult supervision with one $210 ticket.
          • Please use this time to spend undivided attention to your child within the correct age range.           LEMON MERINGUE CAKE | $175

          In this class you will learn how to make a Duchess staff favourite. From the chiffon cake to the lemon cream, each step will be covered, including toasting the meringue with a blow torch. Each student will leave with a full-sized cake and jar of lemon cream.

            MACARON BASICS | $175

            Macaron have been on the Duchess Bakeshop menu since the day we opened the doors. These tricky little cookies constantly have us on our toes. In this class we will teach you how to make both French and Italian meringue shells. You will get to make two batches back to back and decide which method you like best. We will finish off by filling all your macaron with 2-3 different flavours.

              PIE BASICS - APPLE | $175

              Fall's favourite pie! Just in time for Thanksgiving, learn all the tips to working with pie dough and various fillings.Designed for bakers of all skill levels, this class will guide you through the essential techniques needed to create delicious and beautifully crafted pies  from scratch. You will gain hands-on experience in making everything from flaky pie dough to delectable fillings.

              In this class, you will:

              • Master the art of making Duchess Bake Shop's "Easy Mixer Pie Dough" learning tips and tricks for achieving a tender, flaky crust every time.
              • Create a classic apple pie, from preparing the filling to assembling and baking the pie to golden perfection.
              • Learn the technique of blind baking pie shells, essential for making cold pies as well as pumpkin pie.
              • Craft a savory quiche, exploring how to balance flavors and create a rich, custard-like filling.

              PIE BASICS - SHARILEEN'S SOUR CREAM CHERRY PIE | $175

              Baking the perfect pie is something every baker strives for. In this class we will take the fear away from working with pie dough and each make a beautiful Sour Cream Cherry Pie - one of the bake shop's more popular items. We will also try our hand at galettes, a quick hand pie that can be easily whipped up with whatever fruit you have in season. Lastly, it's not a pie class without talking about the dough its self. Each student will go home with some pie dough to continue baking pies at home.

              PÂTE Á CHOUX ADVANCED | $175

               

              The Croquembouche, a classic French wedding cake. A tower of perfectly shaped cream puffs, filled with your favourite filling and dipped in caramel. This masterpiece is sure to impress at your next gathering. In this advanced class, we will walk you through all the tips and tricks to building your own croquembouche. 

              *This class involves dipping each cream puff into hot sugar. While every precaution will be made to prevent burns, please note that they can happen. 

              *Previous knowledge of working with pâte à choux is recommended.

                SAVOURY BAKING | $175

                Savoury baking has long been one of our most requested classes, and we’re thrilled to finally share some of our favourite recipes with you! Join us as we dive into the art of savory baking, starting with Duchess Bake Shop's famous Cheddar & Green Onion Scones—perfectly flaky and full of flavor. You'll also learn to make our classic French Tartiflette, a hearty and comforting flatbread that’s sure to impress. To round out the experience, we'll bake a fragrant herb & cheese pan bread, an ideal companion for warming soups as the colder months approach.

                TART BASICS | $175

                  Get ready to learn the art of shaping a tart the French way, using pâte sucré, the sweet dough used as the base of tart. Tarts are one of Duchess Bake Shop's most classic pastries, having created dozens of flavours over the years there is no shortage of the flavour combinations you can do once you have mastered this skill. In this class we will make 2 different tarts as well as their components, preparing you to feel more comfortable with shaping tarts at home.
