All tickets are sold per person.
Children ages 8 and up are welcome to attend classes with an adult. Both adult and child must have their own ticket.
Children 16 and up can attend on their own without an adult. Please be mindful that if your child comes alone, they will be paired with someone else in the class.
Please note the class time when purchasing your ticket. Not all class times are the same. It is the student's responsibility to note the date and time of the class they are registered for. Refunds will not be issued for classes that are missed.
All Students will be paired in groups of two.
This class is one of Duchess Atelier's most popular classes. We will teach you the Duchess Bake Shop way of making our classic Raspberry White Chocolate Scones. As well as everyone's favourite, Key Lime Tart. Nobody can resist sneaking a taste of a warm Florentine at the end of this class. Learn to make this perfect salty & sweet combo sure to keep you going back for more.
There are just too many Duchess Bake Shop Favourites we had to create another class! This class will cover some of our favourite pastries that we have had in the Bake Shop pastry case over the last 15 years. Have you been waiting for the recipe for some of your favourite seasonal flavours of our filled shortbread? How to get the perfect soft pillowy meringues? How much chocolate really does go into our fudge-y brownies? And which chocolates make up our triple chocolate chip cookie? We will answer all of those questions in more in the brand new class!
Enriched breads are yeast products that contain the addition of fat (butter or oil) and eggs. In this highly requested class we are going to cover everyone's favourite addition to brunch, Cinnamon buns! Another very popular type of enriched bread is babka. This soft textured bread is twisted together with chocolate fudge and makes the most beautiful treat.
Flour, water, yeast and salt are all you need to make delicious bread. We are going to take that one step further and include a pre-ferment to bake delicious, fresh foccacia bread. We will also use a simple milk bun dough to make classic dinner buns or garlic pull-apart bread, you pick!. The class will finish off with a tasting of our freshly baked focaccia and home made whipped ricotta. You will go home feeling more confident in baking bread in your own kitchen.
Sourdough has been one of our most requested classes over the years in the Atelier kitchen. Traditional sourdough bread is a multi-day process that requires long proofing times. We will walk you through a hybrid loaf of bread that uses natural sourdough starter as well as commercially produced yeast so that we are able to shape and bake a loaf in class. We will talk about sourdough starter and each student will get to take home their own portion of starter to bake with at home. We will also cover a couple other recipes that include sourdough starter which are great quick recipes that help use up the starter rather than throwing it out.
*Please note these class times vary from many of our other classes and are 30 minutes longer. It is the student's responsibility to arrive at the correct time. *
This rich and buttery dough is always a favourite, with so many different ways to use it! In this class, you will learn how to make classic brioche dough by hand. We will make filled brioche as well as Duchess Bake Shop's Brioche Pepin. You will also learn how to shape brioche into its traditional Brioche à Tête shape.
Master the art of decorating with buttercream in this hands-on class! Learn to create smooth finishes, vibrant colors, and elegant textures to elevate your cakes. Learn how to pipe classic rosettes and borders and how to level and stack a cake. You will gain the skills and confidence to make show-stopping cakes for any occasion. Perfect for beginners and those looking to refine their techniques!
Ever wanted to learn to make fresh, warm doughnuts at home? But are nervous about everything involved? Let us walk you through, step-by-step everything from mixing, to proofing, to frying so you can feel comfortable making these classic pastries at home.
The decadent chocolate Duke Cake is one of our best-selling items at Duchess Bake Shop. This cake may look intimidating, but in this class we will take you though each recipe step-by-step while you bake & decorate your own perfect Duke Cake. This class is for the chocolate lover, we will finish the class off with a chocolate tasting of some of our favourite Valrohna chocolates and talk about how chocolate is made.
In this class you will learn how to make a Duchess staff favourite. From the chiffon cake to the lemon cream, each step will be covered, including toasting the meringue with a blow torch. Each student will leave with a full-sized cake and jar of lemon cream.
Macaron have been on the Duchess Bakeshop menu since the day we opened the doors. These tricky little cookies constantly have us on our toes. In this class we will teach you how to make both French and Italian meringue shells. You will get to make two batches back to back and decide which method you like best. We will finish off by filling all your macaron with 2-3 different flavours.
Baking the perfect pie is something every baker strives for. In this class we will take the fear away from working with pie dough and each make a beautiful Sour Cream Cherry Pie - one of the bake shop's more popular items. We will also try our hand at galettes, a quick hand pie that can be easily whipped up with whatever fruit you have in season. Lastly, it's not a pie class without talking about the dough its self. Each student will go home with some pie dough to continue baking pies at home.
Knowing how to make pâte à choux, the dough used to make éclairs, profiteroles and chouquettes, is a great fundamental skill to have in your back pocket. In this class, you’ll gain confidence in making and piping pâte à choux. You’ll also learn how to make pastry cream and will fill and decorate the choux you made with multiple fillings. We will finish off the class trying warm gougères fresh out of the oven.
When you think of "savoury baking" we hope you think about cheese! Join us as we dive into the tasty world of savoury baking, starting with Duchess Bake Shop's ever popular Cheddar & Green Onion Scones—perfectly flaky and full of flavour. You'll also learn to make our classic spin on a French Tartiflette, a hearty and comforting flatbread that’s sure to impress. To round out the experience, we'll bake a fragrant herb & cheese pan bread, an ideal companion for warming soups as the colder months approach. This class smells heavenly!
Get ready to learn the art of shaping a tart the French way, using pâte sucré, the sweet dough used as the base of tart. Tarts are one of Duchess Bake Shop's most classic pastries, having created dozens of flavours over the years there is no shortage of the flavour combinations you can do once you have mastered this skill. In this class we will make 2 different tarts as well as their components, preparing you to feel more comfortable with shaping tarts at home.

Bring your child to one of Duchess Atelier's most popular classes; Bake Shop Favourites. Your kids will learn to make raspberry white chocolate scones, key lime pies and florentines. They will learn how to scale a recipe using a kitchen scale as well as use a cook top to cook their Florentine caramel.
While the kids are off from school bring them to Atelier to learn some baking fundamentals and get them more comfortable in the kitchen. Learn how to use a kitchen scale, stand mixer and a stove top while making some of our favourite Duchess Bakeshop recipes.
Learn how to make your very own buttercream cake! In this class we will teach our students how to make Swiss meringue buttercream, frost a cake and decorate using different piping tips. Each group will decorate one cake.

*IMPORTANT* This class uses hot oil. We will not be allowing the kids to place their doughnuts in the oil, this will be done by the adult they come with. It is up to the parents to determine if this class is a good suit for their child. The kids will still be able to roll and cut out their doughnuts, decorate, fill and of course eat their fresh doughnuts.
With the help of their adult, the kids will learn to make their very own macarons! We will walk them through everything they need to know in order to confidently make them again at home. Students will make 2 batches of macaron back to back and create 2 different flavours.
