All Students will be paired in groups of two.
Macaron have been on the Duchess Bakeshop menu since the day we opened the doors. These tricky little cookies constantly have us on our toes. In this class we will teach you how to make both French and Italian meringue shells. You will get to make two batches back to back and decide which method you like best. We will finish off by filling all your macaron with 2-3 different flavours.
In this class you will learn how to make a Duchess staff favourite. From the chiffon cake to the lemon cream, each step will be covered, including toasting the meringue. Each student will leave with a full-sized cake.
The Duchess cake, also known as the "Swedish Princess Cake" is a pastry classic. Made with light lemon chiffon cake, vanilla bean pastry cream, home made raspberry jam, vanilla bean whipped cream and finished off in the classic dome shape, covered in marzipan. This cake is so fun to make and every more enjoyable to eat. Each student will assemble & carve their very own Duchess cake to take home and share with friends & family.
Just in time for Mother's Day, join us in learning to make our signature Duchess Cake. This class is offered as groups of 2 only and includes a gift from Duchess Atelier to help make the day even more special. Spoil your mom, grandma, aunt, sister or any mother figure in your life and spend the day creating this beautiful cake together. Choose to complete both cakes in class, or take one home to complete and share at a later date.

Flour, water, yeast and salt are all you need to make delicious bread. We are going to take that one step further and include a pre-ferment to bake delicious, fresh foccacia bread. We will also use a simple milk bun dough to make classic dinner buns or garlic pull-apart bread, you pick!. The class will finish off with a tasting of our freshly baked focaccia and home made whipped ricotta. You will go home feeling more confident in baking bread in your own kitchen.
While the kids are off from school bring them to Atelier to learn some baking fundamentals and get them more comfortable in the kitchen. Learn how to use a kitchen scale, stand mixer and a stove top while making some of our favourite Duchess Bakeshop recipes.

In this class you’ll learn to make some of the Bake Shop’s most asked-about recipes. These recipes are sure to become your family's favourites as well.
The decadent chocolate Duke Cake is one of our best-selling items at Duchess Bake Shop. This cake may look intimidating, but in this class we will take you though each recipe step-by-step while you bake & decorate your own perfect Duke Cake. This class is for the chocolate lover, we will finish the class off with a chocolate tasting of some of our favourite Valrohna chocolates and talk about how chocolate is made.

Join Master Preserver Camilla Wynne, author of 'Jam Bake: Inspired Recipes for Creating and Baking with Preserves' for a preserving workshop focused on transforming fruit into delicious jams and compotes! In this workshop we will discuss the science of safe canning and how to make the best preserves using less sugar and no added pectin. Camilla will expertly demonstrate how to prepare one seasonal jam recipe and one compote recipe. You will leave the class with a jar of each preserve, ready to tackle any jam-making project, and able to safely and creatively concoct your very own recipes.
Join Duchess Bake Shop 's own tea curator Garner for an extensive tea tasting and lesson on the history of tea, the main tea varieties and how to brew the perfect pot. You will also have the opportunity to create your own tea blend to enjoy at home.
Sourdough has been one of our most requested classes over the years in the Atelier kitchen. Traditional sourdough bread is a multi-day process that requires long proofing times. We will walk you through a hybrid loaf of bread that uses natural sourdough starter as well as commercially produced yeast so that we are able to shape and bake a loaf in class. We will talk about sourdough starter and each student will get to take home their own portion of starter to bake with at home. We will also cover a couple other recipes that include sourdough starter which are great quick recipes that help use up the starter rather than throwing it out.

Enriched breads are yeast products that contain the addition of fat (butter or oil) and eggs. In this highly requested class we are going to cover everyone's favourite addition to brunch, Cinnamon buns! Another very popular type of enriched bread is babka. This soft textured bread is twisted together with chocolate fudge and makes the most beautiful treat.

Ever wanted to learn to make fresh, warm doughnuts at home? But are nervous about everything involved? Let us walk you through, step-by-step everything from mixing, to proofing, to frying so you can feel comfortable making these classic pastries at home.
Baking the perfect pie is something every baker strives for. In this class we will take the fear away from working with pie dough and each make a beautiful Sour Cream Cherry Pie - one of the bake shop's more popular items. We will also try our hand at galettes, a quick hand pie that can be easily whipped up with whatever fruit you have in season. Lastly, it's not a pie class without talking about the dough its self. Each student will go home with some pie dough to continue baking pies at home.
We are ready to kick off summer with the return of "Summer Desserts". In this class we will tackle pavlova, a sweet refreshing dessert that pairs perfectly with fresh fruit from the farmer's market and your favourite fruit curd. Semifreddo, the less complicated alternative to ice cream where you don't need to have an ice cream maker to enjoy this cold dessert. Lastly we will finish off the class with mountain muffins, the best snack for those summer hikes, camping trips and adventures to the playground. Filled with plenty of fresh fruit and topped with a crispy oat topping. We have been waiting months to bring this class back and the hopeful return of summer days!

Advance your macaron making skills with a Duchess Bakeshop classic, the macaron gateau. In this class we will learn to mix macaron batter and pipe it into the classic macaron gateau shape. We will make the fillings for our gateau and assemble it into a beautiful cake. The flavour may vary by class.
*Previous experience making macarons is an asset but not required. To familiarize yourself with macaron we suggest enrolling in our Macaron basics class*
